Avocado Toast w/ Radish Micros

Ingredients:

1 slice whole grain bread
-
½ avocado, mashed
-
¼ tsp lemon juice
-
Salt and pepper to taste

¼ cup radish microgreens
-
Optional: Red pepper flakes

Toast the bread to your liking.

Mix the mashed avocado with lemon juice, salt, and pepper.

Spread the avocado mixture on the toast.

Top with radish microgreens and optional red pepper flakes.
Sunflower Shoot & Strawberry Smoothie

Ingredients:

1 cup almond milk (or any milk)

½ banana
-
½ cup strawberries

¼ cup sunflower shoots
-
1 tsp honey (optional)
Instructions:

Blend all ingredients until smooth.

Pea Shoot & Chickpea Salad

Ingredients:

1 cup chickpeas (cooked or canned, drained)

½ cup pea shoots

¼ cup cherry tomatoes, halved

1 tbsp olive oil

1 tsp lemon juice

Salt and pepper to taste
Instructions:

Mix all ingredients in a bowl.

Toss with olive oil and lemon juice.

Serve chilled or at room temperature.
Broccoli Microgreens & Egg Scramble
Servings: 1

Ingredients:

2 eggs
-
1 tbsp milk
-
¼ cup broccoli microgreens
-
1 tbsp butter or olive oil
-
Salt and pepper to taste
Instructions:

Whisk eggs with milk, salt, and pepper.

Heat butter in a pan and scramble eggs over medium heat.

Stir in broccoli microgreens just before serving.
Spicy Microgreen Hummus & Chicken Wrap

Ingredients:

1 whole wheat tortilla

3 tbsp hummus

¼ cup sunflower shoots
-
¼ cup shredded carrots
-
¼ cup sliced cucumbers

¼ cup cooked chicken breast, sliced or shredded

1 tbsp Greek yogurt or tzatziki (for extra creaminess)
-
½ tsp paprika (for a smoky kick)
-
¼ tsp cumin (for warmth and depth)
-
½ tsp garlic powder
-
½ tsp lemon juice
-
Salt and pepper to taste
Instructions:

In a small bowl, mix the cooked chicken with paprika, cumin, garlic powder, lemon juice, salt, and pepper.

Spread hummus evenly on the tortilla.

Add seasoned chicken, sunflower shoots, carrots, and cucumbers.

1 tsp chopped cilantro (bonus if they are cilantro microgreens)
Instructions:
