Avocado Toast w/ Radish Micros

Servings: 1

Ingredients:

  • 1 slice whole grain bread

  • ½ avocado, mashed

  • ¼ tsp lemon juice

  • Salt and pepper to taste

  • ¼ cup radish microgreens

  • Optional: Red pepper flakes

  1. Toast the bread to your liking.

  2. Mix the mashed avocado with lemon juice, salt, and pepper.

  3. Spread the avocado mixture on the toast.

  4. Top with radish microgreens and optional red pepper flakes.

Sunflower Shoot & Strawberry Smoothie

Servings: 1

Total Time: 5 minutes

Ingredients:

  • 1 cup almond milk (or any milk)

  • ½ banana

  • ½ cup strawberries

  • ¼ cup sunflower shoots

  • 1 tsp honey (optional)

Instructions:

  1. Blend all ingredients until smooth.

  2. Pour into a glass and enjoy immediately.

Pea Shoot & Chickpea Salad

Servings: 2

Ingredients:

  • 1 cup chickpeas (cooked or canned, drained)

  • ½ cup pea shoots

  • ¼ cup cherry tomatoes, halved

  • 1 tbsp olive oil

  • 1 tsp lemon juice

  • Salt and pepper to taste

Instructions:

  1. Mix all ingredients in a bowl.

  2. Toss with olive oil and lemon juice.

  3. Serve chilled or at room temperature.

Broccoli Microgreens & Egg Scramble

Servings: 1

Ingredients:

  • 2 eggs

  • 1 tbsp milk

  • ¼ cup broccoli microgreens

  • 1 tbsp butter or olive oil

  • Salt and pepper to taste

Instructions:

  1. Whisk eggs with milk, salt, and pepper.

  2. Heat butter in a pan and scramble eggs over medium heat.

  3. Stir in broccoli microgreens just before serving.

Spicy Microgreen Hummus & Chicken Wrap

Servings: 1

Ingredients:

  • 1 whole wheat tortilla

  • 3 tbsp hummus

  • ¼ cup sunflower shoots

  • ¼ cup shredded carrots

  • ¼ cup sliced cucumbers

  • ¼ cup cooked chicken breast, sliced or shredded

  • 1 tbsp Greek yogurt or tzatziki (for extra creaminess)

  • ½ tsp paprika (for a smoky kick)

  • ¼ tsp cumin (for warmth and depth)

  • ½ tsp garlic powder

  • ½ tsp lemon juice

  • Salt and pepper to taste

Instructions:

  1. In a small bowl, mix the cooked chicken with paprika, cumin, garlic powder, lemon juice, salt, and pepper.

  2. Spread hummus evenly on the tortilla.

  3. Add seasoned chicken, sunflower shoots, carrots, and cucumbers.

  4. Drizzle with Greek yogurt or tzatziki for extra creaminess.

  5. Roll up the tortilla tightly and slice in half.

Sunflower Shoot & Mango Salsa

Ingredients:

  • ½ cup diced mango

  • ¼ cup diced red bell pepper

  • ¼ cup sunflower shoots

  • 1 tbsp lime juice

  • 1 tsp chopped cilantro (bonus if they are cilantro microgreens)

Instructions:

  1. Mix all ingredients in a bowl.

  2. Let sit for 10 minutes to allow flavors to blend.

  3. Serve with tortilla chips or grilled chicken.
